Chocolate Almond Apricots

These simple no bake treats have only three ingredients and pack a huge flavor punch. Like many German Christmas goodies they are based around dried fruits and nuts, here “glued” together with chocolate. Yum!

Apricots (dried)

Step 1

Melt the chocolate using a double boiler. Don’t have a double boiler? Improvise by putting the chocolate in a cup or bowl and setting it inside a sauce pan filled with hot water. Heat the pan until the chocolate is melted making sure no water gets into the chocolate. You can use any kind of chocolate you like, milk chocolate, semisweet chocolate, chocolate chips, melting chocolate, etc.

Step 2

Brush the top third of the apricot with chocolate. Then dip the top of an almond into the chocolate and “glue” the two together. If your apricots are very large, you may need to cut them in half for proper flavor proportion. I used my own dried apricots from a foraging expedition, which were on the small side.

Step 3

Enjoy!!! To store, allow the chocolate to harden, then keep in a jar or cookie tin.
