This is basically the European equivalent of Mac and cheese. The caramelized onions make the flavor super yummy. If you don’t feel up to making your own pasta, try it with store-bought egg noodles. It will still be delicious.
Ingredients for Spätzle
1 cup flour
1/4 cup milk or water
1/2 tsp salt
Mix flour, eggs, salt, and liquid. Bring a large pot of salted water to a boil and scrape the dough into the water using a Spätzle Maker or colander with large holes. As soon as the Spätzle float to the top, skim them out into a bowl.
Cheese Spätzle Ingredients (serves 3-4)
1 yellow onion
1 tbsp vegetable oil
1 recipe Spätzle
1-2 cups cheese, shredded (a Swiss cheese like Emmenthaler is traditional. I used a medium cheddar)
In a skillet, heat about a tablespoon of vegetable oil. Chop the onion into slices and fry until caramelized. Tip: add a small pinch of baking soda to speed up the process. Not too much, though, or the onion will turn into a weird tasting mush.
Add the Spätzle and cheese to the pan and continue to stir until the cheese is melted and everything is evenly heated. Enjoy!
