Tomato, Avocado, and Bell Pepper Salad

I didn’t have any lettuce on hand and still wanted something fresh to go with my apricot-glazed ham. After searching my fridge, I came up with this easy, refreshing salad with a lime dressing that I am looking forward to making often once tomatoes and peppers are in season in my backyard 🙂 Garnish with herbs like dill, basil, or cilantro and enjoy!

Dressing

Juice of 1 lime
1 tablespoon olive oil
1/8 tsp ground coriander
1/4 tsp salt

Salad Ingredients (serves 2-3)

1 medium avocado
1 cup chopped tomatoes
1 bell pepper (any color)
1/4 cup minced red onion
1 clove garlic (optional)

Instructions

In a bowl, mix together the dressing. Cube the veggies and mince the onion and garlic and add everything to the bowl. Toss to coat and garnish with fresh or dried herbs.
