I love biscotti. They turn out great even in my temperamental gas oven. Since they are supposed to be all dried out anyway, they also store wonderfully, though they’re too delicious to stick around for too long. This recipe also produces that chocolatey taste without the heaviness of a lot of chocolate desserts. Highly recommended with a cup of coffee (or milk if you’re like my husband) 🙂
Ingredients (makes about a dozen)
1 teaspoon vanilla extract
1 cup sugar
2 cups flour
1 teaspoon baking powder
1 tablespoon cocoa powder
1 teaspoon coffee grounds
1 cup craisins
1/2 cup nuts, chopped or chocolate chips (optional)
Preheat oven to 350°F.
Mix the ingredients together, mixing the craisins (and nuts or chocolate chips) in last.
Scoop the dough into a lined baking sheet and form the dough into a flat loaf.
Bake loaf for 25 minutes. Then remove loaf from oven and let rest for 10 minutes.
With a sharp knife, cut the loaf into 1 inch slices.
Bake another 10-15 minutes on each side.
