Stir fries are quick and delicious, and they don’t always have to include rice. This recipe instead uses sweet potatoes and other root vegetables and gets spiced up with barely wilted mustard greens and green onions for a flavorful punch. Full of tasty vegetables, this meal is ready in under 30 minutes!
Ingredients
1/2 onion, diced
1 cup cubed ham (or substitute mushrooms for a vegetarian version)
1 sweet potato
2 small Yukon Gold potatoes
1 turnip
2-3 cups chopped mustard greens
2 chopped green onions
1/4 teaspoon garlic powder
pinch of paprika
1/2 teaspoon thyme
pepper to taste
Step 1
In a large skillet or wok, sauté the onion and ham until they begin to brown.
Step 2
Peel and slice the potato, sweet potato, and turnip. Add to the onions and ham and sprinkle with salt.
Step 3
Add 1 cup of water to the mix and add the thyme, paprika, and garlic. Simmer with the lid on until the vegetables are tender.
Step 4
Clean and chop the green onions and mustard greens and add them to the mix, stirring until just wilted.
Step 5
Add fresh pepper and salt to taste and serve immediately.
